The tradition of crayfish has emerged during the 1900s, but has its origin in the 1800s bourgeois “crayfish Drinker”.
– The peasant society where very little interested in the crayfish, it was considered almost as food. It was the upper classes who ate it. Only in the 1900s was picked up by the growing middle class. Crayfish-eating is very connected with the welfare society, the what we call the welfare state, says Jonas Engman.
It should preferably to be Swedish crayfish, Swedish schnapps, Dill , Västerbotten and the Swedish flags on the table.
– There is something domestically, and that is what we celebrate, says Jonas Engman.
He believes to crayfish party tradition will live a long time.
– One reason is that it is so associated with our perception of Swedishness. We lift gladly forward crayfish eating as something Swedish because it’s so odd. We get a little prilliga when we put on hats and become happy in his hat, says Jonas Engman.
